Diablo Chilli and Tequila Dark Chocolate Truffles
Diablo is smooth, rich dark chocolate truffle made with fresh cream and flavoured with a blend of ground, dried chillies and spices and a slug of tequila. Each one is rolled in dark cocoa and wrapped in red foil.
Truffles come in a box of 12 and you can choose a heat setting - mild, hot or hotter.
I use fine quality Belgian dark chocolate which is 55% cocoa mass. If you would like a more intense cocoa hit, these can be made with a chocolate containing a higher cocoa mass. Just request this when ordering.
This truffles can be frozen and taste delicious straight from the freezer - a chilly chilli pick-me-up!
I do not use any preservatives in my truffles other than the natural preservative properties of the alcohol and sugar in the chocolate itself. The preparation method stabilises the cream, meaning that the truffles will keep for several months. In fact I've eaten them after 4 months and they've still tasted good! However, I would recommend eating them within 2 to 4 weeks to enjoy them at their best.
